[Today's recipe]
Fried rice with braised pork and braised pork
Serves 3-5

1. Braised pork
♦︎Things to prepare
Pork belly block: about 2kg
♦︎Seasonings for stewing, etc.
Water: 2L
Soy sauce: 500cc
Sake: 500cc
Mirin: 500cc
Sugar: 250cc
Green part of green onion: 5 pieces (tear by hand)
Garlic: 10 cloves (crushed)
Ginger: 200g (peel thickly and use the skin)
Star anise: a little (lightly broken)
♦︎Garnish
Bok choy: 1 (halved)
Eggplant: 1 (halved)
Egg: 1 (add salt and vinegar, boil in water for about 7 minutes)
Green onion: a few (finely chopped)

♦︎Pork braised in soy sauce cooking process
・Clean the meat and remove the thin skin (already cleaned in the video)
・Parboil the meat (3 times)
・First time, fill the pot with water and heat on high heat until it boils
・When it boils, change the water and wash off the scum on the meat with running water
・Second time, add rice water to the pot and boil for 30 minutes → wash
・Third time, do the same as the second time (simmering and skimming off the scum)
・Put all ingredients except soy sauce, mirin, and sugar in a pot and heat on high heat until it boils
・When it boils, turn the heat to medium to low and simmer for about 1 hour and 30 minutes

(2 hours and 30 minutes including pre-boiling)

・After confirming that it is soft, add soy sauce, mirin, and sugar (at this point the liquid volume of the broth is 2L)

・After boiling for another hour, cut it into pieces and leave it in the broth overnight (it's okay if you don't cut it up)

(Final simmer for about 3 hours and 30 minutes)

・For the side dishes, lightly fry the eggplant, boil the egg, and lightly boil the bok choy.

2. Kakuni fried rice

♦︎What you will need

White rice: 150g

Pork belly block: As mentioned above

Garlic: 6 cloves (roughly chopped)

White part of green onion: 2 stalks (roughly chopped)

Shiso leaves: 10 leaves (largely cubed)

Eggs: 2 (cracked (mix and dissolve)
♦︎Fried rice seasoning
Salt: a little
Pepper: a little
Ajinomoto: a little
Chicken stock: a little
Soy sauce: a little
Sesame oil: a little
♦︎Kakuni fried rice cooking process
・Mix about 60% of the beaten egg with the white rice
・Mix all the seasonings to make the combined seasoning
・Add salad oil to a heated frying pan and add the mixed rice
・Stir-fry with a spatula without shaking the frying pan until cooked through
・When the whole thing starts to break apart, add the garlic and stir-fry
・Add the separately prepared kakuni and stir-fry
・Add the shiso leaves and green onions and stir-fry
・Finally, add the combined seasoning and stir-fry
♦︎Put on the garnishes, sauces, etc. as above and you're done!
