In this video, I show you how to make the perfect chicken wings in under 30 minutes. I start by trimming and splitting whole chicken wings. Then, I season them with a Nashville hot seasoning mix and coat them in flour. To create a light and fluffy tempura batter, I mix flour, baking powder, more Nashville hot seasoning, and Canada Dry zero sugar. For the final dry batter, I use a combination of all-purpose flour, potato starch, baking powder, and Nashville hot seasoning.

I set up three stations: chicken wings, wet tempura batter, and the final dry batter. After dipping the wings in each station, I deep fry them at 330°F. I cook the flats for 6-8 minutes and the drums for 7-9 minutes separately. After the first fry, I let the oil heat up to 365°F for a second fry, which takes about a minute. Once the wings are double-fried, I sprinkle them with another Nashville hot seasoning, and they're ready for any sauce you'd like to add.
