Learn how Joanne Chang, a James Beard award-winning pastry chef, develops new recipes. Joanne is the pastry chef and co-owner of Flour Bakery, which has four locations in Cambridge and Boston, MA. She is also an honors graduate of Harvard College with a degree in Applied Mathematics and Economics, the author of five cookbooks, and co-owner of Myers and Chang, a restaurant in Boston, MA.

“Bite Scized Conversations” is a collaborative video series by Science & Cooking at the Harvard John A. Paulson School of Engineering and Applied Sciences (SEAS), and Bite Scized. Every year since 2010, Harvard professors have invited food experts and renowned chefs to showcase the science behind different culinary techniques in the Harvard Science and Cooking Public Lecture Series. This year, we are interviewing these guests to learn more about how they explore and experiment with their craft in a video series called “Bite Scized Conversations.”
