Cutting potatoes for french fries is not as complicated as it may seem. In this video I go over a quick and simple method for cutting fries, as well as five tips when it comes to frying and seasoning your french fries.

Tips:
1. Use a good quality fat. My favorite is lard. It holds up well to heat and has a very mild flavor.
2. Don’t over-fill the fryer. A good ratio to remember is about one pound of oil for every one medium or large potato at a time.
3. Timers don’t work. The amount of time fries need to cook is highly subjective. So it’s best to determine when the fries are done based on color. If you like dark fries, leave them in a little longer.
4. Salt as soon as possible. The salt will cling to the fries best if applied right when you take them out of the oil. The oil should be glistening and still very hot on the fries.
5. Don’t peel the potatoes. The skins provide a great texture for the fries, and they are packed with nutrients that you need to be healthy.
