In this video, I'll show you how to make a delicious and healthy Zucchini Roll! This step-by-step recipe features grated zucchini mixed with egg, Parmigiano Reggiano, and chopped parsley, all baked to perfection. Once cooled, we add a layer of flavorful cream cheese and turkey breast (or bologna) before rolling it up into a beautiful spiral. Refrigerate for 2 hours to let all the flavors meld together. Ingredients:

2 large zucchinis, grated
5 eggs
1/2 cup grated Parmigiano Reggiano (parmesan)
3 tablespoons chopped parsley
1 cup cream cheese
200g turkey breast or bologna
Black Pepper

Instructions:
- Preheat your oven to 400°F (205°C).
- In a bowl, mix grated zucchini, eggs, Parmigiano Reggiano, and chopped parsley.
- Spread the mixture evenly on a baking pan lined with parchment paper.
- Bake for 20 minutes or until golden brown.
- Let it cool completely.
- Spread cream cheese evenly over the cooled zucchini base.
- Add a layer of turkey breast or bologna.
- Carefully roll the zucchini base into a spiral shape.
- Wrap in plastic wrap and refrigerate for at least 2 hours.
- Slice and serve. Enjoy!
