Recipe
1 side of pork belly (skin on preferred, but we didn’t have any)
1 large onion cut in half
1 bulb of garlic , cut in half
5 bay leaves
1 tsp pepper corns
Salt to taste

1.Cut pork into long 1 once strips (you can go thicker as they do shrink a lot)

2.Simmer until tender (around 2 hours)

3. Cool on rack to firm up and dry for an hour (minimum) in the fridge

At this point you can deep fry in 325-350F oil for 5-8 min or air fry at 400F (200c) cooking for ten, flip, and then cook for an additional 8-10 min
