Ingredients:
(makes 12 donuts)

2 medium eggs
150 g sugar
pinch of salt
30 g butter, melted & cooled
1 tsp vanilla extract
zest of 1 organic lemon
1 tbsp lemon juice
150 ml buttermilk
250 g all-purpose flour
2 tsp baking powder
3 tsp poppy seeds

Glaze:

250-300 g powdered sugar + 2 x 2 tbsp powdered sugar for decoration
2 tbsp lemon juice
2 tbsp water

Bake the donuts at 220°C (428°F) for 10-12 minutes.
