Leeks are an interesting plant and member of the onion family. In mild climates they survive the winter and freezing temperatures. They will grow into the spring of the second season. When they go to seed they form scapes. Once this occurs the leek becomes fibrous and the taste is more bitter. So not desirable for eating. The scapes on the other hand are excellent. Tender and sweet. Actually fantastic eating. I highly recommend eating these little morsels of goodness.
