INGREDIENTS

★ Lemon Linzer Cookies (makes 30 sandwiches) ★

Chill dough for 1 hour
Bake at 350°F/180°C for 9-11 minutes

⇒ Dough
100g (1/2 cup) white granulated sugar
170g (3/4 cup) soften unsalted butter
2 egg yolks
1 tsp pure vanilla extract
1 lemon zest
245g (2 1/4 cups) all-purpose flour
110g (1 cup) almond meal
1/4 tsp salt

⇒ Decor
Raspberry jam
Icing sugar

★ Matcha Crinkle Cookies (makes 20 cookies) ★

Chill dough for 1 hour
Bake at 350°F/180°C for 9-10mins

⇒ Dough
140g (1 1/4 cups) all-purpose flour
30g (1/4 cup) cornstarch
12g (2 tbsp) matcha powder
75g (1/3 cup) melted unsalted butter
150g (3/4 cup) white granulated sugar
1 large egg
1 tsp baking powder
1/4 tsp salt

⇒ Coating
50g (1/2 cup) icing sugar
15g (2 tbsp) cornstarch

★ Ginger Cookies (makes 30 cookies) ★

Chill dough for 30 mins - 1 hour
Bake at 350°F/180°C for 8 mins

⇒ Dough
275g (2 1/2 cups) all-purpose flour
2 tsp baking soda
3 tsp ground ginger or freshly grated ginger
1 tsp ground cinnamon
1/2 tsp salt
110g (1/2 cup) melted unsalted butter
100g (1/2 cup) brown sugar
50g (1/4 cup) white granulated sugar
80g (1/4 cup) fancy molasses
1 large egg

★ Coconut Cookies (makes 30 cookies) ★

Freeze piped cookies for 5-10 mins before baking
Bake at 350°F/180°C for 9-10mins

165g (3/4 cup) soften unsalted butter
75g (3/4 cup) icing sugar
25g (1/2) large beaten egg
140g (1 1/4 cups) all-purpose flour
30g (1/4 cup) corn starch
50g (1/2 cup) desiccated coconut
1/4 tsp salt

Melted white chocolate
More desiccated coconut

Freeze piped cookies for 5-10 mins before baking
Bake at 350°F/180°C for 8 mins

10g (1 tbsp) hot water
50g (1/2 cup) icing sugar
110g (1/2 cup) soften unsalted butter
25g (1/2) large beaten egg
