■Cocoa sponge
2 egg white
55g sugar
2 egg yolks
50g cake flour
25ml milk
25g unsalted butter
10g cocoa powder
Bake in oven preheated to 170℃ for 25 - 30min
■Chocolate cream
40g sweet chocolate
3g cocoa powder
150ml heavy cream
■Caramel nuts
40g sugar
2 tsp water
80g nuts
