Mangalorean pepper pork recipe

Ingredients:
1 kilo pork, cubed
1 tsp salt
¼ tsp turmeric powder
3 tbsps toddy vinegar
3-4 tbsps ground black pepper
6 onions
2 inches ginger, cleaned
1 whole pod of garlic, cleaned
6 green chillies
5 tomatoes, chopped
2 tbsps tomato puree
2 tbsps cooking oil

Method:

Marinate the pork for at least an hour in the salt, turmeric, black pepper and toddy vinegar

Make a masala in the mixie with the onions, ginger, garlic and green chillies

Heat a pan on a high flame

Heat oil and add chopped tomatoes into the pan. Cook the tomatoes with half a teaspoon of salt till they become soft and pulpy. It takes about 5 minutes

Once the oil comes out and is sizzling again, add the ground masala. Fry till brown. It takes a good 10 minutes

After the oil comes out again and is sizzling again, add the marinated pork

Mix very well. Keep the flame high. Stir and fry for at least 5 minutes

Add half a cup of water, and let it come to a boil

Cover, turn the flame down to medium and simmer for 45 minutes to an hour, till pork is done

Add the tomato puree and about a tablespoon more vinegar

Cook for 10-15 minutes on open flame to reduce the gravy

When the pork curry thickens, it is ready
