Sweet Potato Pudding 

 

5 cup.        Sweet Potatos

1 ½ cup.   Flour 

½ cup.      Cornmeal 

1 ½ cup.   Brown sugar 

3 cup.       Coconut milk 

2 Tbsp.     Vanilla

2 Tbsp.     Melted butter 

1 cup.       Water 

¼ cup.      Raisins 

4tsp.         Cinnamon 

2tsp.         Nutmeg


 

Preheat Oven at 350°F  then grease baking tin.

Peel Potatoes and Blend along with coconut milk and half of water 

Combine All dry ingredients, then add to sweet potato mixture while mixing, combine thoroughly 

Melt butter and add to mixture

Add all Liquid ingredients and mix until fully combine

Pour mixture into greased baking pan

Bake for 50 minutes

Remove from oven and add Custard/Slush Mixture on top then place in over for another 15 minutes
