PICO SALSA:
4 tomatoes, diced
2 limes, juiced
1/2 cup cilantro, chopped
1 red or white onion, diced
1 jalapeno pepper, diced

Dice and chop all of the ingredients and place in a bowl. Season with garlic powder and salt. Serve.

PINEAPPLE SALSA
2 cups chopped fresh pineapple
1/4 cup white onion, chopped
¼ cup chopped cilantro
1-2 Tbs. chopped, seeded jalapeno
Juice of 1 lime
Salt to taste

Cut and prep all of the ingredients and then toss in a bowl. Season with salt as needed.

FRUIT SALSA WITH CINNAMON CHIPS
1 kiwi, peeled and diced
1 apple, diced
8 oz. berries (strawberries, blueberries, etc.)
1 cup pineapple, diced
3 Tbs. jams or preserves
1 Tbs. sugar
1 Tbs. lime juice
10 (10 inch) flour tortillas
Butter cooking spray
Cinnamon & Sugar

Chop, peel and dice the fruit. Put the diced fruit into a bowl and stir. Add the jam/preserves, sugar and lime juice and toss. For the tortilla chips, preheat the oven to 350 degrees. Coat one side of the flour tortilla with butter flavored cooking spray. Sprinkle the tortilla with cinnamon and sugar. Spray again with cooking spray. Cut the tortilla into triangle wedges. Place in the oven for 8-10 minutes, or until the chips are crispy. Allow to cool for 10-15 minutes and then use them to dip in the salsa.

EASY BLENDER SALSA
5-6 tomatoes, stems removed
1 jalapeno, stem removed
½ onion, peeled
3 cloves garlic
Juice of 1 lime
1 cup cilantro leaves
Pinch cumin
½-1 tsp. salt

Prepare all of the vegetables. Place them in a blender and blend until combined. Some chunks are okay. Season with salt as needed and then serve.
