How to Make Qhaub Piaj/Khao Piak (hmong style)

Here is Mama Ker making the kiddos' favorite noodle soup - qhaub piaj.

Ingredients needed:
▸ 1 bag of rice flour
▸ 1 bag of tapioca starch
▸ 1 bag of glutinous flour
▸ 6 cups of hot water
▸ 3 tablespoons of oil
▸ 1 pot of chicken broth
▸ 4 bouillon cubes of chicken flavor

Directions:
1. Pour one bag of rice flour into a bowl
2. Pour one bag of tapioca starch into the bowl
3. Pour one cup of glutinous flour into the bowl
4. Mix everything together
5. Boil a pot full of water on the stove
6. When the water is hot, transfer the pot next to the bowl of flour
7. Add 6 cups of hot water in the bowl while stirring the flour around
8. Add 3 tablespoons of oil in the bowl
9. With gloves on, mix the flour until it becomes a durable dough
10. Cut the dough into smaller pieces
11. Roll all the individual dough until it becomes flatten
*my mom sprays cooking spray onto her hands so the dough will not stick to her hands
12. Sprinkle some tapioca flour onto where you will be working
*this is to coat the dough so it will not stick onto wherever you are rolling it
13. Using a rolling pin, roll each dough until it is long and skinny
14. Fold the dough into thirds and set aside. repeat process until all dough are rolled.
*in the meantime, put unused dough in a bag covered up so it won’t lose heat
15. Cut each individual dough into thin pieces
16. Shake the noodles and set aside. repeat the process.
17. Add 4 bouillon cubes of chicken flavor into pot of chicken broth. place pot on stove over medium heat.
18. Shake off any extra tapioca flour from the noodles
*transfer all the noodles into a bowl
19. Transfer all the noodles into the pot of chicken broth
20. Stir the noodles thoroughly until it rises to the top
*it is now ready to eat!
