Today I am shopping at Trader Joe's so many great finds! Always love to find something new at Trader Joe's and of course our favorites!

G's Baked Potato Soup
You will need:
2 large Russet potatoes (chopped up) small squares, smaller the better - they will cook faster.
1 small bag of Red Potatoes (chopped up)
You can add as much or as little potatoes you want.
16oz heavy cream
1 to 1.5 cups of chopped bacon
TJ's MIREPOX (chopped carrots, yellow onions, & celery)
TJ's box of Chicken Broth (use half the box or about 2 cups)
Seasoning- a little salt, fresh pepper, paprika, a little garlic salt or powder

Cook the bacon first, take out the bacon (leave the grease) I add just a little more avocado oil too.
Cook up your onions, carrots, & celery until tender (5-8 mins)
add your potatoes, stir and cook for 5 mins
make sure you are stirring the potatoes every minute
add 1/4 cup of flour & cook for another 5 minutes
add half the box of the chicken broth/stock stir & cook for another 10 minutes (stirring every minute) add your seasoning too!
add the bacon back
add the heavy cream
Cook for another 10 minutes or until the potatoes are tender.
Garnish with cheddar cheese, you can also add chives and more bacon if you like. Enjoy!
