"How We Built a Family Eco-Vineyard in Poland's Roztocze Region" - Dwór Sanna

In 2006, Dariusz and Elżbieta Nizio from Biłgoraj bought an abandoned 19th century manor house on the edge of Roztocze. In the 1960s, it was a ski resort and their initial idea was to invest in the property to create a hotel with a ski slope. However, as the climate changed, it quickly became obvious that a different idea would be needed. After a long and difficult renovation process, in 2012 they started to establish a vineyard, without any experience in how to do it. Their son Karol became fascinated with the subject of winemaking and changed his career path to oversee their growing natural wine business, Nizio Naturals. Within a few years, their wines won several international awards. Their daughter Agata studied management and now oversees everything that happens at their hotel, which hosts weddings, concerts and other special events. The family sees Poland as a potential rising star in the world of winemaking, and as their experience grew, they became more interested in the ecological aspect of how they run their business. To avoid using any external fertilisers, they introduced animals to the farm. From the milk they obtained, they began producing a wide range of artisan cheeses, which complement the wines they produce. All the animals are grazed daily on 60 hectares of rich pastures and forests. The Nizio family aim to create a closed circle of organic organic material, where the products are freshly made in an organic way and consumed on site, and they aim to become fully self-sufficient in the coming years. Through years of investment and hard work, the place has transformed into a 60-hectare biodynamic farm with 300 animals: sheep, cows and goats. The farm is now the first in Poland to be Demeter certified for biodynamic practices. It is a true family business, employing many local people - Dariusz manages the animals, Elżbieta is the head of cheese production, Karol oversees the growing production of over 20,000 bottles of natural wine per year, and Agata oversees all aspects of running the hotel. Together the family has created a truly unique space.
