Pan-Fried Chicken Dumplings

Ingredients:

1.5 pounds ground chicken
1 cup finely chopped cabbage
2 medium onions, finely chopped
Handful of cilantro, finely chopped
A few green onions, finely chopped
1/2 tablespoon sesame oil
2 tablespoons soy sauce
1/4 teaspoon black pepper
Salt to taste
Store-bought dumpling wrappers
Instructions:

1. In a large mixing bowl, combine the ground chicken, finely chopped cabbage, chopped onions, cilantro, green onions, sesame oil, soy sauce, black pepper, and salt to taste. Mix everything thoroughly to create a well-combined filling.

2. Take a store-bought dumpling wrapper and place a heaping teaspoon of the chicken filling in the center.

3. Moisten the edges of the dumpling wrapper with a little water using your fingertip. This will help seal the dumplings.

4. Fold the dumpling wrapper in half to create a half-moon shape, then press the edges together to seal. You can also use your fingers to create pleats along the sealed edge or use a dumpling mold.

5. Heat a large skillet or non-stick pan over medium-high heat and add a small amount of vegetable oil.

6. Place the dumplings in the pan, making sure they don't touch each other. Cook for 2-3 minutes or until the bottoms are golden brown.

7.Once the bottoms are browned, carefully add 1/2 cup of water to the pan and cover it with a lid. Reduce the heat to medium-low and steam the dumplings for about 8-10 minutes or until the chicken is cooked through.

8. Remove the lid and let the dumplings continue to cook for an additional 2-3 minutes, or until the water has evaporated and the bottoms are crisp and golden.

9. Use a spatula to carefully remove the dumplings from the pan and place them on a serving plate.

10. Serve your pan-fried chicken dumplings hot with your favorite dipping sauce, such as soy sauce mixed with a bit of rice vinegar and chili oil. Enjoy!

Homemade Chili Oil with Garlic and Herbs

Ingredients:

1/2 cup chili flakes (adjust based on your heat preference)
3-4 cloves of garlic, finely chopped
2-3 tablespoons finely chopped cilantro
2-3 green onions, finely chopped
2 tablespoons soy sauce
Instructions:

In a heatproof container or a small saucepan, add the chili flakes.

In a separate small saucepan, heat about 1/4 cup of vegetable oil over low heat until it reaches around 250°F (120°C). Be sure not to overheat the oil, as it may cause the chili flakes to burn and become bitter.

Pour the hot oil over the chili flakes. Be cautious as it may sizzle when the hot oil makes contact with the chili flakes. The heat will infuse the oil with the chili flavor.

Stir in the finely chopped garlic, cilantro, and green onions into the chili-infused oil. Allow the mixture to cool for a few minutes.

Stir in the soy sauce to add a delicious umami flavor to the chili oil.

Once the chili oil has cooled to room temperature, transfer it to a glass jar or airtight container. Seal it tightly and let it sit at room temperature for a few hours or overnight to allow the flavors to meld.

Your homemade chili oil is now ready to use as a condiment or seasoning for various dishes. Store it in a cool, dark place or the refrigerator to maintain its freshness.

This chili oil is excellent for adding a spicy kick and depth of flavor to your favorite dishes, such as stir-fries, noodles, or as a dipping sauce for dumplings and other appetizers. Adjust the amount of chili flakes to control the spiciness according to your preference.
