Sourdough bagels are incredible delicious! They’re much simpler to make than they first appear and are far superior to store bought bagels! The process spans over three days from feeding your starter on night one to baking the bagels on morning three. So, they’re definitely a heavy time investment but the majority of that time does not require active work! Fresh from the oven the crust is so perfect they don’t even need toasting!

I N G R E D I E N T S :

s t a r t e r
35g starter
100g water
100g bread flour

d o u g h
850-875g bread flour - start with 850g of bread flour and add additional 25g if dough is wet and sticky
I use central milling bread flour linked below
475 g water
30g sugar
30g barley malt syrup - you can substitute honey, molasses, or sugar
18g salt
7g diastatic malt - skip this if you don’t have it
200g levain
*this recipe yields 12 regular sized bagels*

b o i l i n g : 1 tbsp barley malt syrup - you can sub honey, molasses, maple syrup, brown sugar
1 tbsp baking soda


T I M E L I N E :

n i g h t o n e:
Feed your sourdough starter to prepare to bake the next morning.
Add 35g of sourdough starter, 100g of water, and 100g of bread flour to a mason jar or other container, mix to combine, cover loosely and let rise overnight

m o r n i n g t w o :
Make the bagel dough
Split bagel dough into 12 pieces (approx 130g each) and shape - or refrigerate dough overnight and shape the following morning

m o r n i n g t h r e e:
Remove dough or shaped bagels from fridge
Shape bagels if you haven’t already
Rest bagels on the counter until they are puffy and pass a float test
Boil a large part of water with barley malt syrup and baking soda
Preheat oven to 450f
Boil bagels for 20-30seconds on each side
Bake boiled bagels for 20min or until golden brown
