Chicken Handi Recipe | Boneless Chicken Handi Recipe
Ingredients
โ€ข Boneless chicken 1 kg, cut into cubes (you can use chicken on bones too)
โ€ข Onion 1 cup, chopped
โ€ข Green chilies, chopped 4-5
โ€ข Ghee 2 tbsp
โ€ข Oil 1/2 cup
โ€ข Tomatoes 2 cups, chopped
โ€ข Salt to taste
โ€ข Red chili powder to taste
โ€ข Turmeric powder 1/2 tsp
โ€ข Garam masala 1 tsp
โ€ข Cumin powder 2 tsp
โ€ข Black pepper powder 1/2 tsp
โ€ข White pepper powder 1 tsp
โ€ข Yogurt 2 cups
โ€ข Tomato puree 2 tsp (optional)
โ€ข Dried fenugreek leaves 2 tsp
โ€ข Fresh cream 4 tbsp
Garnish

โ€ข Green chilies
Instructions
1. Put a pot on the stove at medium flame and add oil and ghee. Add chopped onions and green chilies. Saute till the onions turn golden brown.
2. Add tomatoes and cook until well cooked and oil separates from the gravy.
3. Add salt, red chili powder, turmeric powder, garam masala powder, cumin powder, black pepper powder and white pepper powder, ginger paste and garlic paste. Stir fry until the raw smell of ginger and garlic goes off.
4. Now add chicken pieces and cook until the chicken turns white (it will be still uncooked from inside).
5. Mix yogurt and tomato puree until lump-free and add to the chicken, cover and cook on low heat for 20-25 minutes or until the chicken is cooked and gravy is thickened.
6. Lastly, add dried fenugreek and fresh cream, stir, cover and cook for 2-3 more minutes on low heat.
7. Chicken handi is ready! Dish out in a serving bowl and garnish with fenugreek and cream. Enjoy with roti, naan, pratha or boiled rice.
