Mazesoba (まぜそば), also known as Abura Soba (油そば) is a dry ramen made with shoyu based tare and pork lard which is combined with the noodles and toppings for great flavours.

In my recipe, I made a sweet shoyu tare as the main base sauce, with Taiwanese style fried shallots to add flavour to the ramen oil as well as use them for toppings for crispy bite. Thick handmade strong gluten noodles complements the dish and allows the sauce and oil to be well mixed and absorbed for maximum enjoyment. The dish is topped with kakuni chashu, tender and thick.

As always, I did not use any MSG because I try to use various alternative ingredients to bring out the umami in my own recipes.
