Have you ever been to a Brazilian Steakhouse - where waiters walk from table to table serving meat on giant skewers and slicing it right in front of you onto your plate? One of the best meats you get there is Picanha. It can be a little hard to find, but ask your Butcher for Top Sirloin Cap. It is a wonderful cut of beef, that is full of flavor.

I tried Picanha in two ways. A Choice piece of Picanha, that I smoked whole and then seared. Also a Wagyu Picanha which I sliced and then seared on the hot coals. Which one do you think did better? Hint: The more time they get on that FOGO charcoal, the more the flavor stands out!

To top it all off, I grilled pineapple for dessert. There’s not enough words to say how much I love grilled pineapple. And, for the first time, I tried a piece of meat with grilled pineapple 😱
