Keeping the tradition alive with this sweet potato pudding recipe! It is easier than you would think and it definitely won't disappoint.

Ingredients:
1-1 1/2 lb sweet potato
1/2 lb yam
1 thumb ginger
2 cups coconut milk
1/2 cup coconut trash (if using natural coconut) or unsweetened coconut flakes can work too but its OPTIONAL
1 nutmeg
2 tbsp vanilla extract
1 tbsp cinnamon powder
1/4 cup melted butter
1/4 cornmeal
1/3 cup all-purpose flour
1 1/2 cup sugar
2 tsp salt
1/2 cup raisins (OPTIONAL) I soaked my raisins in some white rum overnight

Topping:
all spices - 1/2 tsp of each
2 tbsp sugar
1/2 coconut milk
rum from soaked raisins (OPTIONAL)

Bake at 350°F for an hour and a half
