Tuna and Onion Pie
A terrific recipe I found on the internet. You'll need:
1 Large onion
Tin of tuna fish
2 eggs
tsp garlic powder
tsp oregano
1/2 tsp chilli powder
salt 7 pepper to season

This is an ideal recipe for a Ridgemonkey but you can use an ordinary frying pan. Chop up the onion and fry until translucent with some browning on the edges. Empty a can of tuna into a bowl and mix in two eggs and the seasoning. Pour the mixture over the onions and mix well. As the mixture begins to firm on the bottom flip over and cook until it firms up. Add some grated cheese, put on a lid and let it cook for a while until the cheese is melted. Serve with salad.

I'm based in the Scottish Highlands and I use a VW campervan to access the great outdoors, where I climb hills, ride my e-bike or gravel bike and just visit some of those places I've never been to. I've been climbing hills and mountains all over the world for 50 years and I'm a former editor of Climber Magazine and The Great Outdoors Magazine.
