Second to none crusty rustic bread. No kneading, high hydration wet dough - just folding. Big holes very chewy, yet fluffy - as they come from the artisan bakeries !
Baking bread feels so special - and this one is just gorgeous yet SO EASY ! !!
Good bread flour is essential - at least 12% gluten content.
I use 15% gluten MARRIAGES CANADIAN VERY STRONG BREAD FLOUR.
500g flour, 430 ml water ( 400 ml if other flour is used), 1 tsp instant yeast, 1 tsp salt.
BAKE : 20 min at 250 deg fan, reduce to 220 deg and another 30-35 min
