Given that the bologna in my local Whole Foods seems to be a direct descendant of the version of bologna introduced to America by German immigrants, I used their bologna for this “German Bologna Sandwich” from 1909’s “The Up-To-Date Sandwich Book.” Interesting that it called for French mustard though.
