This is the perfect dessert when you want an easy cake to serve. Not too sweet, full of pumpkin spice flavor, and easy to transport without needing to store in the fridge!

Ingredients for the pumpkin spice cake:
2 C all purpose flour (240g)
2 tsp cinnamon, ground
¼ tsp 5 spice, ground
¼ tsp cardamom, ground
¼ tsp ginger
2 tsp baking powder
1 tsp baking soda
1 tsp salt
20 grams toasted milk powder, optional
300 grams light brown sugar or Taiwanese black sugar

Liquids for the pumpkins spice cake
190 grams vegetable oil
4 eggs
15 oz pumpkin puree

Ingredients for the cinnamon meringue frosting:
60 grams egg whites
¼ teaspoon white vinegar or lemon juice
100 grams white sugar
Pinch of salt, optional
2 teaspoons cinnamon powder
