Carrot Cake Muffins
1 cup shredded carrots
1/2 cup crushed pineapple
1/4 cup vegetable oil (or extra applesauce)
1/2 cup applesauce
2 tsp apple cider vinegar
2 tsp vanilla extract
1 1/2 cups gluten free flour
1 1/2 tsp cinnamon
3/4 tsp salt
1/2 tsp baking soda
1/2 cup sugar
Preheat oven to 350F
Combine first 5 ingredients and let sit for 1 hour. Next stir in all the remaining ingredients and spoon into cupcake tins lined with parchment cupcake liners. Bake 25 min or till a toothpick inserted in center comes out clean.
Optional add ins could be raisins, coconut walnuts or pecans
Optional topping would be combining nuts, brown sugar, butter and cinnamon and crumbing it on top of the muffins before baking
