We have moose moving into our greenhouse! :D And why not? They have a roof over their heads and food on their plates! Also, we share with you one of our very favorite recipes--- Zucchini Bread. Here's the recipe for all of you!

EXTRA SPECIAL ZUCCHINI BREAD
3 eggs
2 cups sugar
1 c. vegetable oil
1 tsp. vanilla
8 oz. cream cheese (softened)
2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 tsp. salt
Β½ tsp. ground nutmeg
1 c. chopped walnuts (optional)
1 c. chocolate chips (optional)*Add in after the first 10 minutes in the oven

Heat oven to 350*. Grease and flour bundt pan. In a large bowl beat eggs, sugar, oil, and vanilla until smooth. Beat in the cream cheese. In a large bowl, whisk flour, baking soda, baking powder, cinnamon, salt, and nutmeg. On low speed, gradually beat into the egg mixture. Fold in walnuts and zucchini. Place batter in bundt pan. Bake at 350* for 45-50 minutes or until a toothpick/knife inserted in the center comes out clean. Remove the oven and allow it to cool in pan for 10 minutes. Turn out of pan and allow to cool completely.
