The hazelnut coffee sable original version has a strong coffee flavor and is not sweet, so it is for adults.
The milk chocolate glazed version has an added sweet taste and is for adults with a sweet tooth.
I liked the milk chocolate version better.
Milk or white is recommended, but dark is rather bitter, so I think there will be likes and dislikes.


✔Ingredients for 48 mini cookies
(Room temperature) unsalted butter 130g
80 g brown sugar
2g salt
17-18g egg yolk
10g egg white
200g cake flour
30g hazelnut or almond flour
6g of instant coffee + 1 tablespoon of water (minimum enough to melt the coffee)
80g toasted hazelnuts

Topping for cane sugar or turbinado sugar
Milk Coverture 40g

✔Milk chocolate tempering temperature 45℃-25℃-29℃ (not recommended because dark chocolate is bitter)
✔If you do not use chocolate glaze, it is recommended to increase the sugar by 8g.
✔ Preheated to 170 degrees and baked for 20 minutes at 160 degrees (based on smeg)
Ovens with low heat or one heat wire may need higher temperatures.
✔ Shabre cookies need to be perfectly cooled to be crispy.
✔If you have made chocolate glaze, wrap it after it is completely hardened.
✔When storing at room temperature, you can keep it crispy by enclosing a desiccant (silica gel).
✔ Use a perforated mat to prevent spreading. Ovens with no or weak bottom heat can spread.
