My never-fail Lamington recipe, really easy sponge, and a chocolate sauce that's a bit different to most recipes, but keeps the Lamingtons very moist without a thick chocolate coating. Please Subscribe!

125 gms Butter (soft at room temperature)
1 Cup of Caster or super fine sugar
1/2 Cup of Milk
1 3/4 Cups of Self Raising Flour
3 Eggs
Vanilla Extract, 2 Teaspoons
Desiccated Coconut (to roll Lamingtons in)
Chocolate Sauce
4 Cups of Water
3 Tablespoons Caster Sugar (to taste)
1 Tablespoon Corn Flour (to thicken)
5 Tablespoons of Cocoa Powder
taste the sauce (don't burn yourself) and adjust the sauce as you would like
SPONGE
cream butter and sugar
add eggs 1 at a time
add milk and flour, alternating in parts
add vanilla
a pinch of salt won't hurt
spread into a tray about 30cmx20cm and 3cm high - this will give you nice cubes
bake for 30 minutes at 175 degrees c
Then make the SAUCE
into cold water, add dry ingredients, heat to a simmer, to cook out the corn flour taste and to thicken. Taste and adjust as needed
when sponge and sauce are cooked and cooled, set up desiccated coconut in a tray, and roll cubes of cut sponge into chocolate and coconut. Leave to set, or refrigerate for best results.
