CUCUMBERS IN GARLIC SOUR CREAM
1Tbsp minced onion
1tsp garlic powder
1tsp salt
1 1/2c sour cream
1Tbsp chopped parsley
1Tbsp lemon juice
1/4tsp pepper
2 cucumbers, peeled and sliced

Mix all ingredients except the cucumbers. Add cumbers; toss. Chill. Serve in lettuce cups. Makes 6 servings.

OLEN'S SPECIAL THOUSAND ISLAND DRESSING
8oz cream cheese, softened
16oz sour cream
1/2c to 3/4c ketchup
1/4c cider vinegar
1/4c salad oil
1Tbsp Worcestershire sauce
1Tbsp horseradish
2 dashes Tabasco sauce
salt and pepper to taste
paprika to taste
seasoned salt to taste
garlic salt to taste

Cream the cream cheese in large mixing bowl; add sour cream, mixing well. Add remaining ingredients; mix well. Serve on lettuce or boiled shrimp salad. makes 1 quart of dressing.

COTTAGE CHEESE AMBROSIA SALAD
8oz small curd cottage cheese
1c sour cream
2Tbsp sugar
1lb can pineapple tidbits, drained
1lb can fruit cocktail, drained
1c mini marshmallows
1c shredded coconut

Mix cottage cheese, sour cream, and sugar. Add pineapple, fruit cocktail, marshmallows, and coconut. Mix well; refrigerate several hours or overnight. Makes 10 servings.
