The best moist chocolate cake

1 1/2 cup Flour
1/2 cocoa powder, sifted
1 1/2 cup sugar
1 cup vegetable oil
2 large eggs (room temp)
1 cup buttermilk (room temp)
1 tsp salt
1 tsp baking soda
1 tsp baking powder
2 tsp vanilla extract
1 tsp white vinegar
1/2 cup hot coffee( I used decaf for the kids)


1. Preheat oven at 325 Fahrenheit. Prepare 2 x 8 inch round mold with parchment paper and butter .
2. In a small bowl, whisk the flour,sifted cocoa powder, salt, baking soda, and baking powder, and set aside.
3. In a large mixing bowl, whisk together the sugar and oil. Add in the buttermilk, eggs, and vanilla. Whisk in the vinegar and hot coffee.
Once combined, add in the dry ingredients and fold in with a spatula, just until combined. The batter will not be smooth , you will have some lumps and that’s ok .
Use a scale to divide the batter equally.
3. Bake for 30-35 minutes or until a toothpick inserted comes out with slightly moist crumbs.
Let the cake cool 10 minutes in the pan then transfer to a cooling rack .
