A realistic couple of days in my life with me and my kitty Ellylon living in our Dodge Ram Van 1500. We're currently in California and balancing work and play. In this video I share a couple of my absolute favorite meals and hope you get some inspiration from them! Food is one of my favorite parts of life and I love to share it with others. I also get a hitch installed on the van and head out on a new trip to one of my favorite places :)

LEMON ROSEMARY WHITE BEANS:

Scant ¼ cup olive oil
Zest and juice of 1 lemon
1 tablespoon sherry vinegar (or red wine, apple cider, or other vinegar)
1-3 large garlic cloves, minced
1-15½ oz can white (cannellini or butter) beans, rinsed and drained
1-2 tablespoons fresh chopped rosemary (or 1 teaspoon dried)
Salt and pepper to taste

In a bowl, whisk together the olive oil, lemon juice, vinegar, and garlic.
Add the beans, zest, and fresh rosemary. Toss to combine all the ingredients.
Season with salt and pepper to taste. Let it sit a little bit to marinate all the flavors!
