Easy Pea-sy Homemade Apple Cinnamon Loaf Bread - Absolutely Delicious!
Sharing this very delicious and comforting bread I have made a few times and unfortunately be warned, it will get eaten fast! Thanks to Once Upon a Chef Jenn Segal for this recipe.

Ingredients you will need:
1/2 cup light brown sugar (in small bowl for mixing with cinnamon)
1-1/2 teaspoons ground cinnamon
1/2 cup light brown sugar (or white sugar)
2 large eggs
1/2 cup milk (I used lactose free)
2 teaspoons vanilla pure extract
1-1/2 cups all-purpose flour(leveled off)
1/2 teaspoon salt
1-1/2 teaspoons baking powder
1 cup finely diced tart apple (Recommend a Granny Smith, if not any apple will work. Peeling apple is optional)
Olive Oil Spray or Solid Shortening
9" x 5" non-stick loaf pan
Parchment Paper (optional)
Spatula
Large Spoon
Butter Knife
Wisk
Foil Paper
Toothpicks

Preheat the oven to 350 Fahrenheit.
Spray pan with olive oil or grease with solid shortening all inside of loaf pan.
Line the pan with parchment paper. This is optional if you grease pan very well the loaf will not stick.
In the small bowl with 1/2 cup light brown sugar, mix with a whisk the cinnamon and set aside. This will be used to sprinkle on 2 layers a little later.
In a large bowl, with a spatula beat the eggs and 2nd 1/2 cup light brown sugar until creamy. White granulated sugar can be substituted. I just like the taste of brown sugar much better.
Add the melted butter, gradually add the milk and vanilla and mix until blended well.
In another bowl, add the flour, salt, and baking powder and mix well with a whisk. Note, in the video I accidentally showed the salt twice, only add 1/2 teaspoon altogether.
Gradually combine the flour mixture to the butter and milk, adding half then mix with a spatula, and then add the remaining flour mixture and mix until blended well.
Add the diced apples to the batter until mixed well, do not over-blend.
Spoon 2/3 of batter into greased parchment loaf pan, measuring does not have to be exact. Give the loaf pan a few quick shakes to evenly distribute the batter in the pan.
Sprinkle 2/3 of brown sugar/cinnamon on top of the batter.
Spoon the remaining batter on the brown sugar layer. The spatula is the much better tool to remove all the batter.
Sprinkle the remaining brown sugar/cinnamon on top of the batter.
Using a butter knife, slowly make a zig-zag through all the layers of batter.
Place loaf pan on top of the cookie sheet and place in the center of the oven in a pre-heated 350 degrees Fahrenheit oven and bake for 50 minutes.
Remove the loaf after 50 minutes and insert a toothpick in the center and all four sides of the loaf, if it comes out clean it is done.
If the toothpick comes out with uncooked batter, return the loaf to the oven and bake another 10 minutes at 350 degrees.
Repeat test with a toothpick.
Carefully remove the loaf while holding both sides of parchment paper and place on a cooling rack for 20-30 minutes before slicing.
Wrap with foil paper and keep refrigerated.
