Caramelised / Caramelized onion jam is one of our favourite things to have on the shelf, it can add flavour to just about anything, we use it sometimes in soups, spread on pizza or pie dough or pastry as the base flavour to other toppings, used as a savoury/sweet spread on bagels and sandwiches or sourdough grills! It is a time consuming task, which is why we do it in bulk, but well worth it!

per 24 cups of raw diced onion we add
1/4-1/2 cup of ghee
1 cup of ACV
1 cup of Balsamic
6 tbsp Maple
1.5 cups Brown Sugar
tbsp salt
