We have made and seen many Hainanese Chicken Rice recipes, but there are not many Hainanese Roasted Chicken recipe out there. This may not be an authentic Hainanese Roasted Chicken recipe, and I am not sure if you can all it Hainanese Roasted Chicken, but in Malaysia, every chicken rice stall would have both poached chicken and roasted chicken option.

In this video, I was trying to recreate that roasted chicken rice dish. I am not exactly sure what the real recipe is for Roasted Chicken Rice in Malaysia, but this is one of the closest one I came up with based on my extensive research.

In my opinion, the key here is to first brine the chicken with a strong yet simple marinate brine. This allow the chicken to absorb as much water in the meat, so it will be succulent after roasting, and not dry.

Next is the marinade on the skin, you may substitute honey with sugar, but the important thing to know is the sugar is important to give a thin, somewhat crispy (but no too crispy) skin. Remember we are not looking for crispiness, but rather a subtle caramalised flavour. That is why you will need to dry the chicken after brining it, to allow the outer surface to dry, but retain the moisture within the meat.

This is a fantastic recipe to make at home, with just basic simple ingredients.

As for the rice, it is just simple plain rice seasoned with: sesame oil, soy sauce, chicken powder, garlic powder and onion powder. You can check out my other chicken rice recipes below.

Ingredients:

- 1 whole chicken (Medium - Large sized used in this video)

Brine:
- Water
- 1/4 tsp 5 spice powder
- 1/2 tsp salt
- 1/2 cup cut spring onion
- 3 cloves garlic

Marinade:
- 1 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 1/2 tbsp oster sauce
- 2 tbsp honey

Sauce (prepared when serving, for 2 people):
- 1 tsp light soy sauce
- 1 tsp dark soy sauce
- 1/4 tsp sugar
- 2 tsp water
