🍎 Ingredients for Stock
• 5 lb. turkey wings and necks in total
• ½ cup dry white wine
• 1Tb. avocado oil
• 1 large onion, 2 celery stalks, 1 large carrot, roughly chopped
• 4-6 sprigs of thyme
• maximum 4 gallons of filtered water

🫕 Equipment for Stock
• large stock pot
• strainer with optional cheese cloth
• roasting pan
• wooden spoon

🍎 Ingredients for Gravy
• 2 cups dry red wine
• 2 shallots, coarsely chopped
• 3 quarts of turkey stock
• ⅔ cup of turkey fat, supplemented with unsalted butter if needed
• ⅔ cup all-purpose flour
• (optional) demi-glace, fish sauce, & Worcestershire sauce
• salt and pepper

• large sauce pan
• strainer
• whisk
• wooden spoon

🍎 Ingredients for Caramelized Onions
• 5 large onions, thinly sliced
• ½ cup of water
• 1 Tbsp. olive oil

🍎 Ingredients for Turkey
• 1 defrosted turkey (mine was about 12 lb.)
• f*ck ton of salt
• 3-4 celery ribs
• 2-3 apples, sliced ½ in. thick
• 5-7 whole garlic cloves
• 3-4 sprigs of thyme, sage, and rosemary

🫕 Equipment for Turkey
• roasting tray with rack
• kitchen sheers or sharp knife (be careful!)
• tea towels/kitchen towels

🍎 Ingredients for Stuffing
• 10-12 cups of cubed, stale bread (I used 15-16 cups)
• 1 ½ cups peeled, chopped chestnuts
• (optional) 1 lb. ground sausage
• 1 large carrot, 2 celery stalks, 1 yellow onion, all finely chopped
• 8 Tbsp. unsalted butter
• 1 lb. wild mushrooms, finely chopped
• ¼ cup finely chopped sage
• 2 tsp. fresh thyme leaves
• ½ cup dry white wine
• ⅓ cup chopped fresh parsley
• 2 large eggs, beaten up
• 1 qt. turkey stock
• salt and pepper
• 1 Tbsp. avocado oil

• large roasting tray
• large sauce pan
• wooden spoon
• large mixing bowl
• willpower to not eat the pre-baked stuffing before Thanksgiving

🍎 Ingredients for Cranberry Relish
• 3 cups / 12 oz. fresh cranberries
• 1 medium size orange, ideally organic, chopped into chunks
• 1 cup of granulated sugar
• (optional) ½ Tbsp. aged balsamic vinegar & juice of ½ a lemon

• Food processor
• rubber spatula
• mixing bowl

🍎 Ingredients for Mashed Potatoes
• 2 ¼ lb. (about 6-8 spuds) Yukon Gold potatoes , peeled and cut in half
• 2 Tbsp. salt, plus more to taste
• 1 lb (4 sticks) unsalted butter, cut into cubes
• ⅓ cup heavy cream
• ground white pepper, to taste
• 1 pinch ground nutmeg

• ricer or potato masher
• potato peeler
• strainer
• pairing knife
• rubber spatula

🍎 Ingredients for Brussels Sprouts
• ¾ lb. slab bacon, cut into 1-inch cubes
• 2 lb. Brussels sprouts, cut in half
• 1 Tbsp. unsalted butter
• ⅓ cup of water
• salt and freshly ground black pepper to taste
• juice of ½ lemon (about 1 Tbsp), or to taste

🍎 Ingredients for Creamed Pearl Onions
• 1 Tbsp. salt, plus more to taste
• 1 lb. pearl onions, par-boiled til easily pierced with a pairing knife
• 2 Tbsp. (¼ stick) unsalted butter
• 2 Tbsp. all-purpose flour
• 1 ⅓ cups whole milk
• salt and white pepper to taste
• ¼ tsp. chopped fresh thyme leaves
• 3 fresh sage leaves, finely chopped
• (optional) ¼ cup caramelized onions
