▶Ingredients (for 4 cake molds with a diameter of 10 cm)

[Honey Castella]
180g eggs
40 g egg yolks
110 g granulated sugar
20g honey
130 g cake flour
30 g whole milk
40 g vegetable oil
2g vanilla extract

1) Beat egg yolk and egg together. Add sugar and honey then warm the mixture to 37 to 42 degrees Celcius.
2) Whisk with a hand mixer until the trace of the egg foam remains for at least 3 seconds.
3) Whisk at the lowest speed with a hand mixer until a silky and dense foam is made.
4) Sift in the flour and fold gently.
5) Set the oil + milk + vanilla extract mixture to a temperature of 40 to 60 degrees Celcius and mix it with the dough.
6) Fill the batter into the mold by 80% and bake it in a preheated oven for 160 degrees Celcius for 17 minutes.

[Milk fresh cream]
150g heavy whipping cream
10 g sweetened condensed milk
8 g granulated sugar

1) Whisk cold whipping cream, condensed milk, and sugar to make a stiff peak.
2) Put it in a piping bag and pipe it inside the castella. (Piping tip : NO.803)
