I can't wait to hear your feedback on this recipe, which is very close to my previous version, the real fat (   • FAUX (VRAI) GRAS VEGAN  ). The only difference is that the real fat is suitable for terrines and the hard fat is made to be served in medallions using a cookie cutter.

• Shallot, pear and spice chutney •
For 1.5 jars of jam (quantity suitable for 1 hard fat)

600 g whole pear
2 shallots
60 ml cider vinegar
70 g agave syrup
~ 200 ml water
¾ tsp 4 spices
¼ tsp ground ginger
2 badianes
4 cardamoms
1 cinnamon stick
Salt and pepper

• Hard fat •
For 8 to 10 slices (take 8 cm diameter pieces)

150 g cashews, unroasted, unsalted
220 ml boiling water
25 g dried mushrooms (forest mix)
20 g malted yeast
50 g white miso
1/3 tsp 5 berries
1/3 tsp 4 spices
1/3 tsp coriander
2 tbsp of armagnac
1/2 tsp tomato paste
1/2 tsp cider vinegar
100 g deodorized coconut oil
30 g deodorized cocoa butter
2 g agar agar
1/2 tsp salt

Serve with salt crystals, 5 berries, chutney, cold toast and young shoots.
