The BEST Lemon Poppyseed Muffins / VEGAN + Gluten-Free!

Let's make lemon poppyseed muffins! I can tell you right now, these are THE BEST gluten-free muffins I've ever made that are AIRY!! Using aquafaba, these turned out soo much better than I expected!!

Ingredients:
1 cup 1:1 gluten-free flour(bob's red mill)
1/2 cup all purpose gluten-free flour(bob's red mill)
2 tbsp poppy seeds
1 tsp baking soda
1/2 tsp salt
1/3 cup aquafaba
1/4 cup neutral tasting oil
3/4 cup cane sugar
1/2 cup plant milk(I used soy)
3/4 tsp vanilla extract
1/4 cup freshly squeezed lemon juice
1 tbsp lemon zest(about 1 whole lemon)
brown sugar to top

1) whisk to combine flours, poppy seeds, baking soda, and salt, set aside
2) prepare lemon juice and lemon zest, set aside
3) in a large bowl add aquafaba and beat or whisk until frothy(1-2 mins), slowly add oil while beating, add sugar in 1/4 cup at a time beating after each addition. Add milk, vanilla, lemon juice and zest and beat/ whisk once more.
4) add DRY to WET and stir/fold with a wooden spoon or spatula gently just until combined - DO NOT OVERMIX
5) pour into muffin cups and top with brown sugar
6) Bake at 375f for 17-20 minutes, allow to cool 5 mins before removing from baking tray
