Ingredients:
1 cup all purpose flour
3/4 cup granulated sugar
1 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
2 eggs
1/2 cup vegetable oil
1 cup pumpkin puree
optional : nuts for toppings (chopped)
Instructions:
In one bowl put the pumpkin puree, eggs, oil and sugar.
Combine together using a whisk.
Then add the flour, baking soda, baking powder and cinnamon.
Mix the batter until no flour is visible but do not overmix.
Scoop and place the batter on a lined cupcake pan.
Bake in a pre heated oven 170C for 20-25 minutes.
Cool the muffins for 5 minutes after baking.
