The only schezwan sauce recipe you need !!!. Schezwan sauce or schezwan chutney is one of the the most popular indo Chinese recipes . It is an integral part of the indo Chinese food culture in India. It is used as a condiment served with chicken lollipops or it is used as a sauce to make schezwan fried rice or schezwan noodles .
This is a very easy & delicious Schezwan chutney recipe . It is spicy, tangy & garlicky!!!

Ingredients:
- Kashmiri dried red chilies- 100 gms
- Oil- 1 cup
- Garlic, chopped- 100gms
- Ginger, chopped- 50 gms
- Celery stems, chooped- 50 gms
- Water – ½ cup
- Tomato ketchup – 3/4th cup
- Soya sauce- 1 tbsp
- Red chilli sauce- 3 tbsp
- Vinegar – 3 tbsp
- Sugar – 1 tsp
- MSG – 1 tsp (optional)
- White pepper pwder- ½ tsp
- Salt – 1.5 tsp / as per taste

Process:
- Deseed the chilies and cook them in boiling water for 15 minutes on high heat.
- Take it off water, Once they cool down, grind it to a coarse paste.
- Heat oil on medium high heat, add chopped garlic, ginger & celery to it. Cook till the garlic turns light brown. Do not brown the garlic too much
- Add the chilli paste and mix well.
- Add water. Cover and cook for 5-6 minutes.
- Cook on high heat for 10-15 minutes, stirring continuously. The paste should look thick & dark in colour.
- Add tomato ketchup, soya sauce, vinegar, red chilli sauce, sugar, MSG, white pepper powder & salt and mix well.
- cook for another 10 mins.
- Schezwan sauce is ready!! Store in a air tight glass jar, and enjoy whenever needed!!
