9. 15 ounce can petit cut diced tomatoes (I used Rotel with green chiles)
10. 1 1/2 cups shredded Monterey Jack cheese
11. 2 tbsp chopped cilantro
12. cooking spray

Now that we have all our ingredients ready, let's start cooking our Quick Cuban Beef!
Cooking Process:
1. Preheat the oven to 350 degrees F. Coat a baking sheet with cooking spray. Lay poblanos on the pan in a single layer.
2. Bake the peppers for 10-15 minutes ot until soft.
3. Heat the oil in a large skillet over medium high heat. Add the ground beef and cook for 5-6 minutes, breaking the meat up until the meat is cooked through.
4. Add the garlic and cook for 30 seconds.
5. Add the packet of taco seasoning along with 2 tbsp water. Stir to coat the meat in the seasoning.
6. Add the rice, beans, corn, tomatoes and 3/4 cheese to the pan. Remove from heat and stir to combine.
7. Divide the meat mixture between the peppers. Top with remaining cheese.
8. Return the peppers to the oven and bake for 10-15 minutes or until the cheese is melted. Sprinkle with cilantro, then serve.
