The Comtoise galette replaces the Galette des Rois among the Bisontins (from the town of Besançon). This is a perfect dessert for Epiphany or even a simple dessert that will please everyone! It's flavorful, creamy and melts in your mouth. It's a quick and simple recipe to make. It is a choux pastry cake, a galette des Rois without puff pastry and flavored with orange blossom water. The origin of this recipe dates from the 11th century, it was made from bread then the bread changed into brioche, etc. to become the pancake that we know today. Good tasting !
