When pathogens gain entry into your digestive tract they cause an acute illness that leads to inflammation of the Gastrointestinal Tract and malabsorption of nutrients and water. Even after the pathogens have been cleared by the immune system, the inflammation and damage to the small intestines mucosa lining persists, meaning certain foods are less well digested in the subsequent weeks after an illness.
