I guide you through the process of making mooncake, focusing on the preparation of the pastry crust, wrapping and shaping methods to fit the design mold and its size, the resulting in a beautiful tender moist, shiny mooncake.
Mooncake Recipe:
150g golden syrup,
1 tsp lye water or baked baking soda water
1 tbsp cornstarch
225g flour
3.5 tbsp oil
1 pinch of salt
Make Baked Baking soda water:
Bake 1 cup of baking soda at 200 F for one hour,
1 tsp baked baking soda
3 tsp cold water
