Restaurant style Crispy chilli mushroom

For dry coating
- Mushrooms - 200 gms
- Corn flour - 1/4th cup

For the batter :
- All purpose flour (maida) - 1/2 cup
- Corn flour - 1/4th cup
- Pepper powder - 1/4th tsp
- Oil - 2 tbsp
- Salt - 1 tsp
- Water - 1/2 cup

Sauce :
- Soya sauce - 1 tbsp
- Red chilli sauce - 1 tbsp
- Vinegar - 1 tsp
- Corn flour - 1 tbsp
- Water - 1/2 cup

For stir fry :
- Oil - 2 tbsp
- Garlic chopped - 6 to 7 cloves
- Ginger chopped - 1 inch
- Green chilli slit lenghtwise - 7 to 8 nos
- Spring onion white - 2 nos
- Onion - half
- Capsicum - half
- Pepper powder - 1/4th tsp
- Sugar - 1 tsp
- Salt - 1/2 tsp (to taste)
- Spring onion greens

Method :
- Coat the mushrooms with corn flour
- In another bowl l, add all the ingredients listed under batter & make a thick batter. Make sure there are no lumps.
- Add in the mushrooms to this batter and coat them.
- Fry the mushrooms in batches, on medium high heat, till they are golden & crispy.
- Next in a small bowl, mix in all the sauces with corn flour & water
- Keep a wok on high heat. Add oil
- Once the oil is hot, add in the garlic, ginger, spring onion whites & green chillies. Saute for 30 seconds or till fragrant.
- Add in onions & capsicum. Saute for a minute.
- Next add in the sauce mix, pepper powder, sugar & salt. Mix & let it cook for a minute.
- Now toss in the fried mushrooms in the sauce.
- Add spring onion greens. Mix it in.
- There you have it! Crispy chilli mushrooms!
