INGREDIENTS
1. 5 medium sized white onions (you could the red variety)
2. 1 tablespoon of apple cider vinegar (optional)
3. A cup of rice vinegar (feel free to use white or malt vinegar)
4. 1 1/2 teaspoon of turmeric
5. 1 teaspoon of crushed black pepper
6. 2 cups of water
7. 1 teaspoon of sea salt

INSTRUCTIONS
1. Prepare picking solution by adding water, sugar, sea salt, turmeric and black peppermint a pan. Cook on low heat for 3 minutes.
2. Set pickling solution aside to cool down
3. Cut onions diagonally into thin slices ensuring the slices are similar in sizes.
4. Transfer the onion slices into jar. Push the slices down so that the jar is tightly packed
5. Add pickling solution and apple cider vinegar until onions are fully submerged in water.
6. Seal the jar tightly and transfer to refrigerator or consume after a couple of hour.
7. For best result consume after 1-2 weeks as the flavours from the pickling solution would have properly infused into the onion slices

***pickled onions can last for up to 6 months if stored in a refrigerator
****remember to always wash your hands and utensils before making any fermented or pickled food
