This video will show you step-by-step how to cook this fresh guifei clams. First brush the shell of the clams under running water. Soak in water with some salt for at least 10mins. Then cut the clams and remove the unwanted parts from the inside body. Keep one side of the shell to keep the clam meat. Wash again the clams and pat dry. Use lots of vermicelli and soak in water until it is a bit soft. Drain out excess water and put at the bottom of the tray or plate. I like lots of vermicelli for this dish, that‘s why I put them at the bottom instead of putting on top of each claim. Put the clams one by one around the plate. Make some minced garlic and fry in hot oil. No need to fry to golden brown, just fry a bit and pour the fried garlic & oil on to each clam. Take the whole plate to steam for 3mins. Take out the dish and sprinkle some spring onion. Well, isn’t it easy?
