Welcome to my Brunch menu! Today we are making a very simple and quick eggs bennedict!

RECIPE (4 with salad, 2 for super hungry)
-Poaching eggs
4 Fresh Eggs in room temp, cleaned
Deepest pot you have, around 2L of water
1Tbsp of vinegar
-Hollandaise sauce
2 egg yolks
80g of unsalted butter, melted, warm
1Tbsp of lemon juice or vinegar(you can add .5-1 Tbsp more to your taste)
salt
Dijon mustard, optional. Also try adding couple of drops of tabasco
(You CAN'T keep the sauce for the following day. Serve immediately)

-English Muffins 2, or you can also use brioche buns
-Bacon, or ham, or smoked salmon(eggs royale), or spinach sauteed in butter+salt for 15 seconds(eggs florentine)
